Who doesn’t love French Toast, cream cheese, and a delicious compote filling? This Stuffed French Toast recipe is versatile and you can easily customize it to your liking.

My Inspiration for this Recipe

On the weekends, my friends and I like to get breakfast at Keke’s Breakfast Cafe. They serve a heavenly Stuffed French Toast with cream cheese and a variety of compotes to choose from. I personally love their blueberry and apple compotes. In my recipe below you can find both options. The blueberry compote is great for the summer season and apple for the fall.

Customizing Your Stuffed French Toast

An easy way to customize this recipe is to stuff the French toast with the cream cheese filling and add toppings.

Topping Options:

  • candied nuts
  • fresh fruit: blueberries, bananas, strawberries, raspberries, etc.
  • nutella spread
  • chocolate chips
  • drizzle flavored syrups on top: maple, blueberry, strawberry

If you are not a fan of apple or blueberry compote for your filling: try a strawberry, mixed berry, or peach compote. All of these flavors would go well with this Stuffed French Toast recipe!

What type of Bread to use for Stuffed French Toast

For this recipe, I used Brioche. Brioche is a light and fluffy French bread that melts in your mouth when you take a bite. I think of it as a “fancier” bread and I wanted to use something special for his breakfast dish. No offense to all the other breads! When choosing bread for this recipe make sure it is one that will not fall apart when dipped into the batter. Challah is similar to Brioche and is another good option. It is buttery and keeps it shape. You can find this bread in beautiful braided designs that will add elegance to your dish. You could also use a wheat bread for a slightly healthier alternative.

How to Make Stuffed French Toast

*Choose which compote you’d like to make. Both have similar instructions.

Blueberry Compote

  1. Wash your blueberries. Once dry, add the berries, vanilla, sugar, and lemon juice to a pot over medium heat. Stir until the berries have broken down and softened.
  2. Add the cornstarch and water mixture to the pot and boil till the compote thickens.
  3. Once thickened take off heat and set aside while you prepare the cream cheese filling and French toast.

Blueberry Compote

Apple Compote

  1. Wash and chop your apples. Add them along with vanilla, lemon juice, brown sugar, nutmeg, and cinnamon to a pot over medium heat.
  2. Simmer for about seven minutes to soften the apple pieces.
  3. Add the cornstarch and water mixture to the pot and boil till the compote thickens.
  4. Once thickened take off heat and set aside while you prepare the cream cheese filling and French toast.

Stuffed French Toast

  1. Whisk together batter ingredients in a shallow dish, a cake pan works well.
  2. Turn griddle on to 250-300 degrees. Spray lightly with cooking oil so that the French toast doesn’t stick to the griddle.
  3. As the griddle heats up, dip both sides of the brioche into the batter mixture.
  4. Place bread on the griddle and cook for three minutes on each side, or until it is golden brown.
  5. Make the cream cheese spread by stirring together the softened cream cheese and powdered sugar.
  6. Assembling the Stuffed French Toast: spread a thick layer of the cream cheese spread on one side of the bread, place a few tablespoons of the compote on top of the cream cheese layer, finally place another piece of brioche on top like a sandwich.
  7. To serve, cut the toast diagonally or vertically, sprinkle with powdered sugar, and drizzle with maple syrup.

Stuffed French Toast

This stuffed french toast recipe is creamy and indulgent. You can choose whatever filling you'd like but my favorite is blueberry compote or apple compote. Give it a try, you won't regret it.

Batter

  • 2/3 cup milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 10 pieces brioche (sliced)
  • maple syrup (to taste)

Filling and Blueberry Compote

  • 1 tablespoon vanilla extract
  • 8 ounces cream cheese (softened)
  • 1/4 cup powdered sugar
  • 2 cups blueberries (fresh)
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons water
  • 3 teaspoons cornstarch

(or Apple Compote)

  • 2 crisp green apples (peeled, cored, and chopped)
  • 1 tablespoon lemon juice
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon vanilla extract
  • 3 tablespoons water
  • 3 tablespoons cornstarch

Blueberry Compote

  1. First, wash the fresh blueberries (you can also use frozen instead if you have them). Once dry, add blueberries, vanilla, sugar, and lemon juice in a pot over medium heat. Stir for about 7 minutes or until the berries begin soften and release their juices.

  2. In a small bowl mix together the water and cornstarch, add to the compote and boil for six more minutes so that it thickens.

  3. Take pot off the heat and set aside as you prepare the French toast.

(or Apple Compote)

  1. Put the chopped apples, vanilla, lemon juice, brown sugar, nutmeg, and cinnamon in a pot over medium heat.

  2. Simmer until the apples are tender for about seven minutes.

  3. In a small bowl mix together the water and cornstarch, add to the compote and boil for six more minutes so that it thickens.

Stuffed French Toast

  1. Whisk together the eggs, milk, vanilla, and cinnamon. Pour the mixture into a shallow dish, a cake pan works well.

  2. Turn on griddle to medium heat or around 250-300 degrees. Spray lightly with cooking oil spray so that your french toast doesn't stick to the griddle.

  3. As your griddle heats up, dip both sides of the brioche slice into the batter mixture.

  4. Place the bread on the griddle and cook three minutes on each side, or until it is golden brown in color.

  5. While the French toast is cooking, stir together the softened cream cheese and powdered sugar.

  6. To assemble, spread a thick layer of the cream cheese spread on one side of the bread.

  7. Place a few tablespoons of the blueberry or apple compote on top of the cream cheese layer.

  8. Set another piece of brioche on top of the delicious filling, like a sandwich.

  9. Sprinkle some powdered sugar on top and drizzle with maple syrup.
