Cranberry Brie Bites

Do you need an easy appetizer for a party or family gathering? Well I have the perfect recipe for you! Try my Cranberry Brie Bites! I have always been a big fan of brie cheese and cranberries no matter what time of year it is. Although, there is something especially Christmassy about those flavors intertwined together.

For the cranberry sauce in the Cranberry Brie Bites, I make a delicious homemade sauce with orange juice, zest, and brown sugar. The brie and brown sugar compliment the natural tartness of the cranberries and the fresh citrus flavor of the orange. Check out my Homemade Cranberry Sauce! If you are crunched for time you can use canned cranberry sauce instead and it will still be just as delicious.

How to Make Cranberry Brie Bites

  1. First preheat the oven to 375 degrees.
  2. Next, grease a mini cupcake tin with Crisco or spray with cooking spray so that the bites easily come out of the pan when they are done baking.
  3. Flour a clean surface and roll out the crescent dough, making sure that the pre-cut seams disappear.
  4. Cut the rolled out crescent dough into 24 squares. (You might have a little dough left over. I just made a few extra bites.)
  5. Place the squares into the mini cupcake tin molds.
  6. Put a small scoop of cranberry sauce into the center of each crescent dough square.
  7. Slice the brie into small rectangular pieces and place each piece of brie on top of the cranberry sauce in every bite.
  8. Chop the pecans and sprinkle a pinch on top of each bite.
  9. Bake until the pastry is golden. This should take about 10-15 minutes.

I had the incredible honor and pleasure of singing in the ensemble for one of Andrea Bocelli’s concerts as a part of his Believe World Tour. His voice is absolutely breathtaking and ethereal, especially live! Here are some of the pieces that I sang in the concert.
